Cheesy Spinach Corn Enchiladas Recipe




  • Chicken in small cubes (cooked) 1 cup
  • Onion chopped 1 medium
  • Spinach blenched ¼ cup
  • Sour cream ½ cup
  • Margarine 1 tbsp
  • Paprika 1 tsp
  • Green chilli (chopped) 1 tbsp
  • Parsley 1 tbsp
  • Salt 1 tsp
  • Pepper 1 tsp
  • Salsa ¼ cup

Cooking Directions

Heat margarine fry onion. Add green chilli, pepper, and paprika, salt.

Now on low flame add cream, chicken, chicken stokes, spinach.

Put 2-tea spoon mixture on tortilla bread. Roll up and place seam side down in baking dish, tap with shredded cheese and salsa corner with foil bake at 180o C for 20 minutes.
